It’s chutney time….

What to do with a whole heap of over ripe mangoes????…. you make chutney!!!

It’s the perfect time to buy trays of mangoes but for two people they can take a while to get through.  So this summer mango season I’m planning to do a lot more with them than just eat them fresh.

Here I have cut up some onion, a small red chilli, grated ginger and soaked in vinegar over night. The fruit that I have used is (obviously mangoes) but the dried fruit is sultanas and a small amount of dried apricots and figs.

Tomorrow I will be doing the second stage with the sugar and then finally sealing into a jar.
